Requirements: Must meet RCB upper division course requirements and 45 semester hours.This course focuses on the analysis of each phase of restaurant operations and management decisions that impact profitability, short-term and long-term success factors and corresponding metrics. Specific areas include menu planning, food sourcing, purchasing, receiving, storing, preparation and service systems for multi-unit restaurants, corporate enterprises or entrepreneurial start-ups.
