Description
Course Description: The Mediterranean diet is a well-known, heavily researched dietary pattern shown to prevent and aid in the treatment of many chronic conditions. The U.S. food environment, food supply, and overall national public health is very different from that of the Mediterranean regions around the world. The purpose of this course is to immerse students in the food and lifestyle aspects of a Mediterranean country, Italy. This course will allow students to immerse themselves into the Mediterranean Diet and lifestyle of Florence Italy, a city known for Italian history, art, culture and cuisine. Students will engage with expert professors and speakers on topics including Mediterranean diet and public health, olive oil production, and the Slow Food Movement. Students will participate in hands-on workshops in making pasta, olive oil and wine taught by culinary experts. Q
